I know Turkish is rich in suffixes and adding things on to a particular word to make a really, really long one (where in English it'd be many words (even a sentence)) but how do you know when to do this?

when you wish to express f.e. who is doing something (I, you, he/she/it.....) then you need the according suffix.

s-n

(y)-z
s-n-z
lar/ler

where - stands for the space where you have to insert the vowel according to the set vowel-harmony
