| Can anyone please tell me how to cook it the Cyprus way, I can only find Egyptian recipes and it's not the same. Cheers. |

If your talking about the long green leaves then you take them of the stem, wash them well and then boil some water with salt and add them to the boiling water, reason being they will keep their green colour if dropped in the boiling water. You can also cook them with potatoes which you add the same time as the moloshes.
When cooked drain from the water and add olive oil and lemon juice.

Hmmm not sure about that one, we've always eaten it with potatoes.
I would n't think it would be so hard, fry the onions add tomotoes, cook the meat, add water and chuck in the moloches, sounds good to me. ;-) |

If you are taking about mallows, you just boil them and serve them neat, with olive oil and lemon. Never heard of mallows cooked with potatos to be honest but then I am a terrible cook. My mum used to pick them from the fields when they were in season but these days you can also buy a bunch at posh supermarkets all over Cyprus.
At this time, mallows are in bloom and their petals make a fantastic tea, which is good for all maladies, according to books. |

| You can use molohia almost the same way you use spinach..eg fried with eggs or cassereole with lamb... |

I'm Alive :D
Ok, it went very well my mum and dad are over from Cyprus and staying with me and I made it for them and they loved it.
Got recipe from my cousin
This is what I done:
Washed and soaked Molohia
Fried some goat and put to one side
Fried 2 small onions and 2 pieces of garlic
Add 2 tins of tomato's and cooked meat
Add stock and Molohia
Cook for 3 hours
Add juice of 2 lemons
Cook for half hour
Was Beautiful |
