Do you mean Egg and Lemon soup which has rice in it and you can also put chicken in as well? It's a renowned cure for all ailments... If so, my wife makes it all the time as we both love it... I'll dig out the recipe.
Doesn't avgo mean egg??? :? |

Ok well this is how I make it :
1 whole chicken (or chicken pieces)
3 eggs
Juice of 2 lemons
1 cup of rice
salt (according to your taste buds and blood pressure)
Boil the chicken and then remove the skin and bones, cut chicken into pieces and place back in the same water.
Add the rice and lemon to the chicken and wait for rice to cook.
In order to add the eggs you must wait for the soup to cool down completely so that eggs will not seperate.
or if you cant wait do what I do....
Put beaten eggs into big bowl and take small soup spoon of the soup which is still cooking and add to the eggs, mix thourougly and then add another soup spoon, again mix thouroughly so that egg will not break and become a white stringy mixture, continue adding slowly slowly the soup to the eggs until egg mixture with soup is also very hot and then mix all together.
If you prefer without chicken then you can just boil the rice with a few chicken stock cubes and do all the rest as mentioned above.
Don't forget salt to taste. |
