Wine Baked Potatoes.
 
However many potatoes you want to cook.
Oregano
Paprika
Salt and Pepper
Red Wine
1 Cup of Olive Oil
 
Peel and cut potatoes into 1/4's and score them 3 or 4 times across the top.
Heat oil ontop of the cooker until hot, put potatoes into the oil and turn to coat. Pour over as much red wine as you require.
Add seasoning, freshly ground salt and black pepper are the best but use what you prefer.
Sprinkle over a generous amount of oregano and paprika and place in a hot oven, 200c or gas 6, for about 1 & 1/2 hours or until soft and well browned and crunchy. Serve immediately to accompany any meat dish that you are cooking on the day.

My dearest Brother, I'm afraid I've been so busy with the kids (little boy is one on the 25th and wants to walk all day long..............I hate this age!!) that I have no time what so ever to cook!!! My poor hubby is living on sandwiches, pizza and spaghetti at the moment!
I am DEFINATELY going to do these potatoes soon though, I promise! Wink

Living 'oop north' I have to do a 75 mile trek to get any sheftalia... or wait for relatives to visit. Unfortunately none are coming over between now and Christmas and I can't be bothered to drive 150 miles... I'll just have to wait till Christmas Crying or Very sad
