I had some the other day at ZEN in Limassol ..... it was bloody brilliant, it was vegetable and giant prawn tempura..............now my taste buds are working over time and its only 11.55!!! Confused

My pleasure! I love the stuff! I know what you mean about food! I have the recipe for prawn tempura if you need it?! Wink It's part of the vegetable tempura section Smile

Ingredients
2 egg whites
25g/1oz cornflour
50ml/1¾fl oz soda water
3 king prawns prawns, butterflied
hot oil for deep frying
For the dipping sauce
½ bunch fresh coriander
1 garlic clove, crushed
1 lemon, juice only
pinch sugar
pinch chilli flakes
½ stick lemongrass, cut into small pieces

Method
1. In a clean bowl whisk the egg whites untill stiff.
2. In a separate bowl mix together the cornflour and soda water. Fold in the egg whites.
3. Dip the prawns into the mix, making sure they are thoroughly coated.
4. Heat the oil in a heavy-bottomed saucepan or deep-fat fryer. Deep-fry the prawns for two minutes until golden, and drain on kitchen paper.
5. For the dipping sauce, put the coriander, garlic, lemon juice, sugar, chilli flakes and lemongrass in a blender and blend until smooth.
6. Serve the prawns with the dipping sauce.


PS Or just use the batter you would have made for the vegetables! Using soda water, or beer even, is meant to make the batter lighter and less gloopy but it all tastes the same to me Laughing
